Instructions

- In another bowl, mix the oil and sugar until smooth. Add eggs one at a time, then stir in buttermilk, food coloring, and peppermint extract.
- Gradually combine the dry ingredients with the wet mixture until just mixed; avoid overmixing.
- Fill each cupcake liner two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
- Cool completely before preparing frosting by beating butter and powdered sugar together until fluffy. Add cream and vanilla to reach desired consistency.
