  • 1 cup buttermilk (or milk)
  • 2 tbsp red food coloring (gel)
  • 1 tsp peppermint extract
  • ½ cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 3 tbsp heavy cream or milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, mix the oil and sugar until smooth. Add eggs one at a time, then stir in buttermilk, food coloring, and peppermint extract.
  4. Gradually combine the dry ingredients with the wet mixture until just mixed; avoid overmixing.
  5. Fill each cupcake liner two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Cool completely before preparing frosting by beating butter and powdered sugar together until fluffy. Add cream and vanilla to reach desired consistency.
