  • 1 can (15 oz) Black Beans, rinsed
  • 1 can (15 oz) Garbanzo Beans (Chickpeas), rinsed
  • 1 can (14.5 oz) Diced Tomatoes
  • 1 medium Onion, chopped
  • 1 cup Bell Peppers, chopped (mixed colors)
  • 3 cloves Garlic, minced
  • 2 tsp Chili Powder
  • 2 tsp Cumin
  • 2 tbsp Olive Oil
  • Fresh Cilantro (optional for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish with olive oil.
  2. In a large skillet over medium heat, warm olive oil. Sauté onions and bell peppers until softened (about 5 minutes).
  3. Add minced garlic and cook until fragrant (about 1 minute).
  4. Stir in kidney beans, black beans, garbanzo beans, and diced tomatoes; mix well.
  5. Sprinkle chili powder and cumin over the mixture, stirring to combine.
  6. Transfer the mixture to the prepared baking dish. Cover with foil and bake for 25 minutes; then uncover and bake for an additional 10 minutes until bubbly.
  7. Allow to cool slightly before serving; garnish with fresh cilantro if desired.
