- 1 cup Bell Peppers, chopped (mixed colors)
- 3 cloves Garlic, minced
- 2 tsp Chili Powder
- 2 tsp Cumin
- 2 tbsp Olive Oil
- Fresh Cilantro (optional for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish with olive oil.
- In a large skillet over medium heat, warm olive oil. Sauté onions and bell peppers until softened (about 5 minutes).
- Add minced garlic and cook until fragrant (about 1 minute).
- Stir in kidney beans, black beans, garbanzo beans, and diced tomatoes; mix well.
- Sprinkle chili powder and cumin over the mixture, stirring to combine.
- Transfer the mixture to the prepared baking dish. Cover with foil and bake for 25 minutes; then uncover and bake for an additional 10 minutes until bubbly.
- Allow to cool slightly before serving; garnish with fresh cilantro if desired.
