  • 2 large Portobello mushrooms
  • 4 cups mixed greens (spinach and arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced

  • 3 tbsp balsamic vinaigrette

Instructions

  1. Wash and dry the mixed greens thoroughly.
  2. Preheat the grill or grill pan over medium heat. Brush each Portobello mushroom with olive oil and season with salt and pepper. Grill for about 5-7 minutes per side until tender.
  3. While grilling, prepare cherry tomatoes and cucumber by slicing and dicing them.
  4. Once grilled, slice the mushrooms into strips and combine in a large bowl with mixed greens, cherry tomatoes, cucumbers, and feta cheese.
  5. Drizzle with balsamic vinaigrette and toss gently to coat all ingredients evenly. Serve immediately.
