  • 1 whole chicken (34 pounds)
  • 6 cloves fresh garlic, minced
  • 2 limes, juiced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp chili powder
  • Optional: Fresh herbs (cilantro or parsley)
  • Drizzle of honey
  • 2 tbsp low-sodium soy sauce
  • 1 tsp ground cumin

Instructions

  1. Preheat oven to 450°F (232°C).
  2. Spatchcock the chicken by cutting along both sides of the backbone and flattening it by pressing down on the breastbone.
  3. In a bowl, whisk together garlic, lime juice, olive oil, soy sauce, honey, chili powder, cumin, salt, and pepper.
  4. Marinate the chicken in a zip-top bag or shallow dish for at least 30 minutes.
  5. Place the marinated chicken on a lined baking sheet and roast for about 45 minutes or until the internal temperature reaches 165°F (74°C). Broil for an additional 5 minutes if needed for crispiness.
