- 1 medium fennel bulb, sliced
- 3 cloves garlic, minced
- 4 tbsp extra virgin olive oil
- 1/2 cup freshly grated Parmesan cheese
- 1/2 tsp red pepper flakes (adjust to taste)
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Preheat oven to 425°F (220°C). Toss sliced fennel with 2 tablespoons olive oil, salt, and pepper on a baking sheet. Roast for about 25 minutes until caramelized.
- While fennel roasts, boil salted water in a large pot. Cook spaghetti according to package instructions until al dente. Reserve 1/2 cup pasta water before draining.
- In a skillet over medium heat, add remaining olive oil and sauté minced garlic until fragrant (about 1 minute). Remove from heat.
- Combine drained spaghetti with roasted fennel and garlic in the skillet. Gradually add reserved pasta water until desired consistency is reached.
