  • 1 cup fresh peas (or frozen)
  • 4 oz creamy goat cheese
  • 4 slices sourdough bread
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp fresh mint, chopped
  • 1 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a pot and add fresh peas. Cook for 3 minutes until tender; drain.
  2. In a skillet, heat olive oil over medium heat and sauté chopped mint for 30 seconds.
  3. Add drained peas to the skillet, mash gently with a fork, then stir in lemon juice until combined.
  4. Crumble in goat cheese and mix until creamy.
  5. Toast sourdough slices until golden brown.
  6. Assemble sandwiches by placing a generous amount of the pea mixture on one slice of bread and topping with another slice.
