  • 1 lb shrimp, peeled and deveined
  • 1 cup farro
  • 1 ½ cups cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ¾ cup feta cheese, crumbled
  • 3 tbsp lemon juice (freshly squeezed)
  • 4 tbsp extra virgin olive oil
  • ¼ cup fresh parsley or basil, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the farro by rinsing it under cold water. In a saucepan, combine farro with 3 cups of water or broth. Bring to a boil, then reduce heat and simmer for 25-30 minutes until tender. Drain if needed.
  2. Heat olive oil in a skillet over medium-high heat. Add shrimp seasoned with salt and pepper; cook until pink and opaque (about 3-4 minutes per side).
  3. While the shrimp cooks, chop the cherry tomatoes, cucumber, and red onion.
  4. In a large bowl, combine cooked farro, sautéed shrimp, chopped veggies, crumbled feta cheese, fresh herbs, lemon juice, and remaining olive oil; mix gently.
  5. Taste and adjust seasoning as desired. Serve chilled or at room temperature.
