  • 1 lb parsnips, peeled and cut into 1-inch pieces
  • 3 tbsp honey (preferably local raw honey)
  • 2 tbsp extra virgin olive oil
  • 2 tsp fresh thyme leaves (or rosemary)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine carrots and parsnips with olive oil, honey, salt, pepper, and thyme. Toss until evenly coated.
  3. Spread the vegetable mixture in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 25-30 minutes, stirring halfway through until golden brown and tender.
