  • 2 ears fresh corn on the cob
  • 1 bunch asparagus (about 810 spears)
  • 4 spring onions
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat (400°F or 200°C).
  2. Husk the corn and trim tough ends from the asparagus; rinse under cold water.
  3. Toss corn, asparagus, and spring onions in a bowl with olive oil, salt, and pepper until well-coated.
  4. Grill corn directly on the grates along with asparagus and spring onions for about 5-7 minutes per side until charred.
  5. Remove from grill and let cool slightly before cutting corn off the cob and chopping asparagus and spring onions into bite-sized pieces.
  6. In a large bowl, combine grilled ingredients with freshly squeezed lemon juice; toss gently.
