  • 1 cup shredded unsweetened coconut flakes
  • 1 ½ cups all-purpose flour

  • 1 tsp baking soda
  • ½ tsp salt
  • 2 large eggs, room temperature
  • ⅓ cup vegetable oil (or melted coconut oil)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Stir in the eggs and vegetable oil until combined.
  4. In another bowl, whisk together flour, sugars, baking soda, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Gently fold in the pineapple chunks and shredded coconut.
  7. Pour the batter into the prepared loaf pan and bake for 60-70 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack.
