  • 2 cups vegetable broth
  • 1 cup chopped cremini or button mushrooms

  • 1/2 cup finely chopped celery
  • 1/2 cup rolled oats
  • 1/2 cup cranberry sauce (homemade or store-bought)
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 2 tbsp olive oil

Instructions

  1. Prepare the lentils: Rinse lentils under cold water. In a pot, combine lentils and vegetable broth. Bring to a boil, reduce heat, and simmer for about 30 minutes until tender.
  2. Sauté vegetables: Heat olive oil in a skillet over medium heat. Add onion, garlic, carrots, and celery; sauté for 5–7 minutes until softened.
  3. Add mushrooms and seasoning: Stir in mushrooms, thyme, and smoked paprika; cook for an additional 5 minutes until mushrooms are tender.
  4. Combine mixtures: In a bowl, mix cooked lentils with sautéed vegetables and rolled oats until well combined.
  5. Shape the loaf & bake: Preheat oven to 350°F (175°C). Transfer mixture to a greased loaf pan, press firmly into shape, and smooth the top. Bake uncovered for about 45 minutes until firm and golden brown.
  6. Add cranberry glaze: Spread cranberry sauce over the top during the last 10 minutes of baking. Let cool slightly before slicing.
