  • 2 medium sweet potatoes (about 400g), peeled and diced
  • 1 can (15 oz/425g) black beans, rinsed and drained
  • 1/2 medium red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp fresh lime juice
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss diced sweet potatoes with olive oil, chili powder, salt, and pepper. Spread on a baking sheet.
  3. Roast for 25–30 minutes until tender and caramelized.
  4. In a large bowl, combine black beans, red onion, and cilantro.
  5. Once sweet potatoes have cooled slightly, add them to the bowl.
  6. Whisk together lime juice, olive oil, salt, and pepper; drizzle over the salad and toss gently.
  7. Let sit for 10 minutes before serving warm or chilled.
