- 1/2 medium red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tbsp fresh lime juice
- 2 tbsp olive oil
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C).
- Toss diced sweet potatoes with olive oil, chili powder, salt, and pepper. Spread on a baking sheet.
- Roast for 25–30 minutes until tender and caramelized.
- In a large bowl, combine black beans, red onion, and cilantro.
- Once sweet potatoes have cooled slightly, add them to the bowl.
- Whisk together lime juice, olive oil, salt, and pepper; drizzle over the salad and toss gently.
- Let sit for 10 minutes before serving warm or chilled.
