  • 1 cup orzo pasta
  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups fresh spinach
  • 1/2 cup sun-dried tomatoes (oil-packed)
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat. Add minced garlic and sauté for about one minute until fragrant.
  2. Stir in sun-dried tomatoes and cook for another minute until slightly softened.
  3. Pour in vegetable broth and bring to a boil. Add orzo pasta, reduce heat to simmer, and cook for 8-10 minutes until most liquid is absorbed.
  4. Fold in fresh spinach and drained white beans, cooking until spinach wilts.
  5. Squeeze fresh lemon juice over the mixture and sprinkle with Parmesan cheese. Stir well before serving.
