  • 2 (6 oz) fresh cod fillets
  • 3 tbsp white miso paste
  • 2 tbsp pure maple syrup
  • 1 tbsp rice vinegar
  • 1 cup broccolini
  • 1 tsp sesame oil
  • 2 garlic cloves, minced
  • 2 tbsp low-sodium soy sauce
  • 2 green onions, chopped (for garnish)
  • Cilantro (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together miso paste, maple syrup, rice vinegar, soy sauce, minced garlic, and sesame oil until smooth.
  3. Place the cod fillets on the prepared baking sheet and brush half of the marinade over them. Let marinate for 30 minutes.
  4. Blanch broccolini in boiling salted water for 2-3 minutes until bright green. Transfer to ice water to stop cooking.
  5. Arrange blanched broccolini around the marinated cod on the baking sheet and brush with remaining marinade.
  6. Bake for 15-20 minutes until the fish flakes easily.
  7. Garnish with chopped green onions and cilantro if desired before serving.
