Description

Ground Beef Enchiladas are a comforting Mexican classic, featuring savory ground beef wrapped in soft tortillas, topped with melted cheese and zesty enchilada sauce. Perfect for family dinners!


Ingredients

  • 1 lb lean ground beef
  • 8 corn tortillas
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 1 onion, chopped
  • 2 cups enchilada sauce (store-bought or homemade)
  • Fresh cilantro for garnish
  • 1 tsp cumin
  • 1 tsp chili powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef. Add chopped onions and sauté until translucent.
  3. Stir in cumin and chili powder, then mix in half of the enchilada sauce.
  4. Fill each tortilla with about 1/4 cup of the beef mixture, roll tightly, and place seam-side down in a greased baking dish.
  5. Pour remaining enchilada sauce over the filled tortillas and sprinkle generously with cheese.
  6. Bake for 25 minutes or until the cheese is bubbly and golden brown. Serve hot garnished with fresh cilantro.
