- 1 lb lean ground beef
- 8 corn tortillas
- 2 cups shredded cheddar and Monterey Jack cheese
- 1 onion, chopped
- 2 cups enchilada sauce (store-bought or homemade)
- Fresh cilantro for garnish
- 1 tsp cumin
- 1 tsp chili powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef. Add chopped onions and sauté until translucent.
- Stir in cumin and chili powder, then mix in half of the enchilada sauce.
- Fill each tortilla with about 1/4 cup of the beef mixture, roll tightly, and place seam-side down in a greased baking dish.
- Pour remaining enchilada sauce over the filled tortillas and sprinkle generously with cheese.
- Bake for 25 minutes or until the cheese is bubbly and golden brown. Serve hot garnished with fresh cilantro.
