  • 4 medium sweet potatoes
  • 1 cup fresh cranberries
  • 1 large Granny Smith apple, diced
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 2 tbsp unsalted butter
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Clean sweet potatoes and poke holes in them.
  2. Bake sweet potatoes for 45-60 minutes until tender.
  3. In a bowl, mix cranberries, diced apple, brown sugar, cinnamon, butter, salt, and pepper.
  4. Once cool, slice sweet potatoes in half and scoop out flesh into the mixture.
  5. Fill each potato with the cranberry-apple mixture and bake for an additional 15-20 minutes.
