  • 1 cup Medjool dates (pitted)
  • 1 cup all-purpose flour
  • 3/4 cup soft brown sugar
  • 1 tsp baking powder
  • 1/2 cup unsalted butter (room temperature)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup heavy cream
  • Optional: 1/2 cup chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Soak the pitted dates in boiling water for about 15 minutes until soft; then mash.
  3. In a bowl, cream together the softened butter and brown sugar until fluffy. Add eggs one at a time, followed by vanilla.
  4. Sift together flour and baking powder, then fold into the butter mixture until just combined. Gently mix in the mashed dates and nuts if using.
  5. Pour batter into the prepared pan and bake for 50-60 minutes or until a toothpick comes out clean. Let cool before serving.
