- 1 cup red lentils (200g), rinsed
- 1 medium onion, diced
- 3 garlic cloves, minced
- ½ cup fresh cilantro or parsley, chopped
- 1 tsp ground cumin
- 1 tsp paprika
- ½ cup panko breadcrumbs (70g)
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Cook the lentils: Boil 1 cup of red lentils in 2 cups of water for about 15 minutes until soft.
- Prepare sweet potatoes: Boil the cubed sweet potatoes in salted water until fork-tender, approximately 10-12 minutes.
- Sauté aromatics: In a pan, sauté the diced onion and minced garlic in olive oil over medium heat until translucent (5-7 minutes).
- Combine ingredients: Mash the cooked sweet potatoes, then mix in the cooked lentils, sautéed onion and garlic, chopped herbs, cumin, paprika, salt, and pepper.
- Form patties: Shape the mixture into 2-inch patties and coat lightly with panko breadcrumbs.
- Cook patties: Fry the patties in olive oil over medium heat for about 3-4 minutes per side until golden brown or bake at 400°F (200°C) for 20-25 minutes.
