  • 1 medium spaghetti squash (about 34 pounds)
  • 4 oz pancetta, diced
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp freshly cracked black pepper
  • 2 tbsp extra virgin olive oil
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil and season with salt and pepper.
  2. Place the squash cut side down on a lined baking sheet and roast for about 40 minutes, until tender.
  3. In a skillet over medium heat, cook the pancetta until crispy, about 5-7 minutes.
  4. In a bowl, whisk together eggs, Parmesan cheese, minced garlic, and black pepper; set aside.
  5. Once the squash is roasted, flip it over and scrape out the insides into strands using a fork.
  6. Mix shredded squash in the skillet with pancetta and off heat add egg mixture; toss quickly until creamy.
