Description

Mushroom soup is a warm, comforting dish that envelops you in its creamy richness and earthy flavors. Perfect for chilly evenings or cozy gatherings, this recipe combines fresh mushrooms, aromatic herbs, and a touch of cream to create a velvety bowl of goodness.

Ingredients

Scale
  • 1 lb fresh mushrooms (cremini and shiitake)
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or coconut milk for vegan)
  • 1 tsp fresh thyme leaves
  • Salt and pepper to taste
  • 2 tbsp butter or olive oil for sautéing

Instructions

  1. Gather all ingredients and chop the mushrooms, onion, and garlic.
  2. In a large pot over medium heat, melt butter. Add onions and sauté until translucent (about 5 minutes).
  3. Stir in minced garlic and add mushrooms; cook until they release their juices (approximately 8 minutes).
  4. Pour in vegetable broth; simmer for 10 minutes to enhance flavors.
  5. Use an immersion blender to puree the soup until smooth but leave some chunks for texture.
  6. Return the pot to low heat, stir in heavy cream gradually, and heat through without boiling.
  7. Season with thyme, salt, and pepper to taste before serving hot.
