  • 2 lbs butternut squash, peeled and cubed
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • 2 cups shredded cheddar cheese
  • 1 cup seasoned breadcrumbs
  • 1/4 tsp nutmeg
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté onions until translucent; add garlic and sauté for an additional minute.
  3. Stir in the cubed butternut squash along with salt and pepper. Cook for about 10 minutes until slightly tender.
  4. In a bowl, whisk together heavy cream and nutmeg. Pour over the sautéed mixture in the skillet.
  5. Mix in shredded cheddar cheese until melted.
  6. Transfer to a greased baking dish and top with breadcrumbs mixed with melted butter.
  7. Bake uncovered for 25-30 minutes until bubbly and golden brown.
