  • 1 medium kabocha squash (about 2 lbs), halved and seeded
  • 1 large sweet onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp extra virgin olive oil
  • 4 cups vegetable broth
  • 1 can (14 oz) full-fat coconut milk
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • Salt and pepper to taste
  • Fresh herbs (optional for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Place the halved kabocha squash cut-side down on a lined baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for about 30 minutes until tender.
  2. In a large pot over medium heat, sauté the diced onion in olive oil until translucent, about 5 minutes. Add minced garlic in the last minute.
  3. Once the squash is roasted, scoop out the flesh into the pot with onions and garlic. Pour in vegetable broth and coconut milk, then add cinnamon, nutmeg, salt, and pepper.
  4. Simmer for 10 minutes to combine flavors. Blend until smooth using an immersion blender or regular blender.
  5. Taste and adjust seasoning if necessary before serving hot with fresh herbs as garnish.
