Instructions
- Preheat your oven to 350°F (175°C) and generously spray a muffin tin with baking spray.
- In a large bowl, whisk together cottage cheese and eggs until well mixed.
- Stir in shredded cheese, chopped vegetables, salt, and pepper.
- Pour the mixture into the muffin tin, filling each cup about three-quarters full.
- Bake for 20-25 minutes or until golden brown at the edges and set in the center.
- Allow to cool for 5 minutes before gently removing from the tin.
