Description

Cottage Cheese Egg Bites are fluffy, protein-packed delights that make for a perfect breakfast or snack. Easy to customize and irresistibly delicious, they are sure to satisfy your cravings.


Ingredients

  • 1 cup low-fat cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped bell peppers (or spinach)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Baking spray

Instructions

  1. Preheat your oven to 350°F (175°C) and generously spray a muffin tin with baking spray.
  2. In a large bowl, whisk together cottage cheese and eggs until well mixed.
  3. Stir in shredded cheese, chopped vegetables, salt, and pepper.
  4. Pour the mixture into the muffin tin, filling each cup about three-quarters full.
  5. Bake for 20-25 minutes or until golden brown at the edges and set in the center.
  6. Allow to cool for 5 minutes before gently removing from the tin.
