  • 4 large russet potatoes
  • 1 cup sharp cheddar cheese, shredded
  • 1/4 cup fresh chives, chopped
  • 4 tbsp unsalted butter
  • 1/2 cup full-fat sour cream
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the russet potatoes thoroughly.
  2. Place the washed potatoes directly on the oven rack and bake for 45-60 minutes until fork-tender.
  3. Once baked, allow the potatoes to cool slightly before slicing them in half lengthwise. Scoop out the insides into a mixing bowl, leaving a thin layer inside each skin.
  4. Mix the potato flesh with butter, sour cream, cheddar cheese, chives, salt, and pepper until smooth and creamy.
  5. Spoon the filling back into each potato half and mound it high.
  6. Return the filled potatoes to the oven and bake at 350°F (175°C) for an additional 15-20 minutes until golden brown.
