- 1 lb ground beef (80/20)
- 1 cup breadcrumbs (plain or seasoned)
- 2 large eggs
- 1/4 cup balsamic vinegar (divided)
- 1/4 cup ketchup (divided)
- 1 tbsp Dijon mustard
- 2 tbsp fresh parsley (chopped)
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix ground beef, breadcrumbs, eggs, half of balsamic vinegar, half of ketchup, mustard, parsley, onion powder, garlic powder, salt, and pepper until just combined.
- Shape the mixture into a loaf on a lined baking sheet or in a loaf pan.
- In a small bowl, combine remaining ketchup and balsamic vinegar. Spread half of this glaze over the meatloaf.
- Bake for about 60 minutes until the internal temperature reaches 160°F (70°C). Brush on more glaze five minutes before it's done baking.
- Allow to rest for 10 minutes before slicing and serving.
