Ingredients

  • 1 lb ground beef (80/20)
  • 1 cup breadcrumbs (plain or seasoned)
  • 2 large eggs
  • 1/4 cup balsamic vinegar (divided)
  • 1/4 cup ketchup (divided)
  • 1 tbsp Dijon mustard
  • 2 tbsp fresh parsley (chopped)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix ground beef, breadcrumbs, eggs, half of balsamic vinegar, half of ketchup, mustard, parsley, onion powder, garlic powder, salt, and pepper until just combined.
  3. Shape the mixture into a loaf on a lined baking sheet or in a loaf pan.
  4. In a small bowl, combine remaining ketchup and balsamic vinegar. Spread half of this glaze over the meatloaf.
  5. Bake for about 60 minutes until the internal temperature reaches 160°F (70°C). Brush on more glaze five minutes before it's done baking.
  6. Allow to rest for 10 minutes before slicing and serving.
