  • 1 cup quinoa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 medium red bell pepper, diced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup freshly squeezed lime juice (about 2 limes)
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Rinse quinoa under cold water until the water runs clear. In a medium saucepan, combine rinsed quinoa and 2 cups of water. Bring to a boil over medium heat.
  2. Reduce heat to low and simmer for about 15 minutes or until all the water is absorbed. Let sit covered for 5 minutes before fluffing with a fork.
  3. In a large mixing bowl, combine cooked quinoa, black beans, diced red bell pepper, and chopped cilantro.
  4. Drizzle lime juice and olive oil over the mixture. Season with salt and pepper to taste; toss gently to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
