- Salt & pepper to taste
Instructions
- Rinse quinoa under cold water until the water runs clear. In a medium saucepan, combine rinsed quinoa and 2 cups of water. Bring to a boil over medium heat.
- Reduce heat to low and simmer for about 15 minutes or until all the water is absorbed. Let sit covered for 5 minutes before fluffing with a fork.
- In a large mixing bowl, combine cooked quinoa, black beans, diced red bell pepper, and chopped cilantro.
- Drizzle lime juice and olive oil over the mixture. Season with salt and pepper to taste; toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
