  • 1 cup long-grain rice (jasmine or basmati)
  • 2 cloves garlic, minced
  • 1 tablespoon butter or olive oil
  • 1 ¾ cups chicken broth (or water)
  • 1 teaspoon salt
  • Juice of 1 lime
  • ½ cup fresh cilantro, chopped

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan over medium heat, melt the butter or olive oil. Sauté the minced garlic until fragrant.
  3. Add the chicken broth and salt; bring to a boil before adding the rinsed rice.
  4. Cover, reduce heat to low, and simmer for 18-20 minutes until all liquid is absorbed.
  5. Once cooked, let sit covered for 5 minutes. Fluff with a fork and stir in lime juice and cilantro.
