Ingredients

  • 2 medium beets (about 250g)
  • 1 cup canned chickpeas (drained and rinsed)
  • 1/4 cup tahini
  • 2 cloves garlic (minced)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cumin
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wrap each beet in aluminum foil and place on a baking sheet. Roast for about 45 minutes until tender.
  2. Let the roasted beets cool slightly before peeling off their skins.
  3. In a food processor, combine peeled beets, chickpeas, tahini, garlic, lemon juice, olive oil, cumin, salt, and pepper. Blend until smooth; add water for desired creaminess.
  4. Taste and adjust seasoning if needed. Serve in a bowl, drizzled with olive oil and garnish as desired.
