  • 1 lb boneless turkey breast
  • 1 cup long grain rice
  • 4 cups low-sodium chicken broth
  • 1 medium onion, diced
  • 34 garlic cloves, minced
  • 2 cups frozen mixed vegetables
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients and prepare the onion and garlic.
  2. (Optional) Sauté onions in a skillet with oil until soft, then add garlic for the last minute.
  3. Transfer sautéed onions and garlic to the slow cooker. Add turkey, rice, mixed vegetables, broth, thyme, paprika, salt, and pepper.

  5. Shred the turkey with two forks once cooked and mix back into the rice.
