Description

Ingredients

  • 2 large Russet potatoes
  • 8 oz sirloin or ribeye steak
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup bacon bits (optional)

Instructions

  1. Preheat the oven to 425°F (220°C). Scrub the potatoes and poke them with a fork. Rub with olive oil and season generously with salt and pepper.
  2. Bake the potatoes on the oven rack for 45-60 minutes until tender.
  3. While baking, heat oil in a skillet over medium-high heat. Season the steak and sear for 3-4 minutes per side until browned. Let rest for five minutes before cutting into bite-sized pieces.
  4. Once done, slice open the baked potatoes and fluff the insides. Top with sour cream, shredded cheese, green onions, and bacon bits if desired.
