  • 1 medium zucchini (sliced)
  • 1 cup cherry tomatoes (halved)
  • 3 cloves garlic (minced)
  • 1 tsp dried Italian herbs (basil, oregano, thyme)
  • ¼ cup grated Parmesan cheese

Instructions

  1. Cook pasta according to package directions in salted boiling water until al dente; reserve ½ cup pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant (about 1 minute).
  3. Add diced bell peppers and zucchini; cook until slightly softened (about 5 minutes).
