  • 1 cup heavy cream
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Wash and chop the broccoli into bite-sized pieces. Dice potatoes into cubes.
  2. In a large pot over medium heat, melt butter and sauté chopped onions until translucent (about 5 minutes). Add minced garlic and cook for an additional 30 seconds.
  3. Pour in vegetable broth and diced potatoes; bring to a gentle boil. Reduce heat and simmer until potatoes are tender (around 15 minutes).
  4. Add broccoli florets and cook until tender but vibrant (about 5 minutes). Blend until smooth using an immersion blender or stand blender.
