- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup Greek yogurt (full-fat or low-fat)
- 1 medium cucumber, finely chopped
- 1/4 cup fresh dill, chopped
- 1 garlic clove, minced
- Juice of 1 lemon
- Salt and pepper to taste
- 4 cups mixed greens (arugula or spinach)
Instructions
- Preheat the grill or pan over medium-high heat. Season chicken with salt and pepper. Cook for 6-7 minutes per side until fully cooked. Let rest before shredding.
- In a bowl, mix Greek yogurt, chopped cucumber (squeezed to remove excess water), minced garlic, lemon juice, dill, salt, and pepper until well combined.
- In a large bowl, toss shredded chicken with the tzatziki sauce. Gently fold in mixed greens until evenly coated.
- Serve chilled or at room temperature, garnished with extra tzatziki if desired.
