Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup Greek yogurt (full-fat or low-fat)
  • 1 medium cucumber, finely chopped
  • 1/4 cup fresh dill, chopped
  • 1 garlic clove, minced
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 4 cups mixed greens (arugula or spinach)

Instructions

  1. Preheat the grill or pan over medium-high heat. Season chicken with salt and pepper. Cook for 6-7 minutes per side until fully cooked. Let rest before shredding.
  2. In a bowl, mix Greek yogurt, chopped cucumber (squeezed to remove excess water), minced garlic, lemon juice, dill, salt, and pepper until well combined.
  3. In a large bowl, toss shredded chicken with the tzatziki sauce. Gently fold in mixed greens until evenly coated.
  4. Serve chilled or at room temperature, garnished with extra tzatziki if desired.
