Description

Tex-Mex Beef Enchiladas are a cheesy, savory delight that brings the bold flavors of Mexican cuisine right to your table. Perfect for weeknight dinners or festive gatherings!


Ingredients

  • 1 lb lean ground beef
  • 8 flour tortillas
  • 2 cups Tex-Mex cheese blend (cheddar and Monterey Jack)
  • 2 cups red enchilada sauce
  • 1 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup chopped onions
  • 2 tsp cumin
  • 2 tsp chili powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium heat until no longer pink.
  3. Add chopped onions, cumin, and chili powder; cook until onions are translucent (about 5 minutes).
  4. Warm tortillas in the microwave for about 30 seconds to make them pliable.
  5. Spread the meat mixture down the center of each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  6. Pour red enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
  7. Bake for 20-25 minutes until cheese is melted and bubbly.
