  • 1 cup fresh pineapple chunks
  • 1 cup bell peppers (any color), sliced
  • 1 medium sweet onion, sliced
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil (for frying)
  • 1 tsp sesame seeds (optional)

Instructions

  1. Chop chicken into bite-sized pieces. Prepare bell peppers, onions, garlic, ginger, and pineapple.
  2. In a bowl, mix soy sauce, rice vinegar, minced garlic, ginger, and cornstarch. Add chicken and marinate for 15-20 minutes.
  3. Heat vegetable oil in a large skillet over medium-high heat until shimmering. Cook marinated chicken until golden brown (about 5-7 minutes).
  4. Add sliced onions and bell peppers; stir-fry for 3-4 minutes until slightly softened.
  5. Toss in pineapple chunks and stir for an additional 2 minutes until heated through.
  6. Combine extra soy sauce with rice vinegar in a bowl and pour over the mixture; cook for another minute until glossy.
  7. Serve hot over steamed rice or noodles, garnished with sesame seeds if desired.
