Ingredients

  • 4 cups fresh spinach, chopped
  • 2 cups rotini pasta, uncooked
  • 1 cup crumbled feta cheese
  • 1 cup dried cranberries

  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste
  • 1/2 cup walnuts or pine nuts (optional)

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente (8-10 minutes). Drain and cool.
