  • 1 lb large shrimp (peeled and deveined)
  • 2 ripe avocados
  • 1/4 cup fresh cilantro (chopped)

  • 1/2 tsp garlic powder
  • 2 tbsp olive oil (plus extra for brushing)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Layer two sheets of phyllo dough, brush lightly with olive oil, and cut into squares. Press each square into muffin tins to form cups.
  3. Sauté shrimp in a skillet over medium heat, seasoned with salt, pepper, cayenne pepper, and garlic powder until pink (about 3-5 minutes).
  4. In a bowl, mash avocados with lime juice and chopped cilantro until creamy yet chunky.
