Ingredients

  • 1 lb boneless, skinless chicken breasts (about 34 breasts)
  • 2 cups bell peppers (1 red, 1 green, 1 yellow, sliced)
  • 1 large onion (sliced into wedges)
  • 2 tbsp extra virgin olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Juice of 1 lime
  • Tortillas (flour or corn)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the bell peppers and onion into strips and wedges.
  3. In a bowl, mix olive oil, chili powder, cumin, garlic powder, salt, and pepper. Toss diced chicken in the mixture until well coated.
  4. Spread the seasoned chicken and veggies evenly on the prepared baking sheet.
