Ingredients

  • 1 lb boneless, skinless chicken breasts, chopped
  • 2 cups fresh green beans, trimmed
  • 1 cup jasmine rice
  • 2 tbsp toasted sesame oil
  • ¼ cup low-sodium soy sauce
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp sesame seeds, toasted

Instructions

  1. Prepare jasmine rice according to package instructions.
  2. Heat sesame oil in a large pan over medium heat and sear the chicken until golden brown (5-7 minutes).
  3. Add garlic and ginger; sauté until fragrant (1-2 minutes).
  4. Whisk together soy sauce and honey; pour over chicken and simmer until thickened (3-4 minutes).
  5. Stir in green beans and cook until bright green and crisp (about 3 minutes). Serve over rice, topped with sesame seeds.
