- 3 medium carrots, chopped
- 4 medium Yukon Gold potatoes, diced
- 1 large yellow onion, chopped
- 4 cloves garlic, minced
- 4 cups low-sodium lamb stock or broth
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat. Sear cubed lamb shoulder until browned on all sides (5-7 minutes).
- Add chopped onions and minced garlic; sauté until onions are translucent.
- Stir in chopped carrots and potatoes, then pour in enough lamb stock to cover the ingredients by an inch. Bring to a gentle boil, then reduce heat.
- Add fresh thyme and rosemary along with salt and pepper. Cover the pot and simmer on low for 1.5 to 2 hours until lamb is fork-tender.
