Ingredients

  • 2 lbs bone-in lamb shoulder
  • 3 medium carrots, chopped
  • 4 medium Yukon Gold potatoes, diced
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium lamb stock or broth
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear cubed lamb shoulder until browned on all sides (5-7 minutes).
  2. Add chopped onions and minced garlic; sauté until onions are translucent.
  3. Stir in chopped carrots and potatoes, then pour in enough lamb stock to cover the ingredients by an inch. Bring to a gentle boil, then reduce heat.
  4. Add fresh thyme and rosemary along with salt and pepper. Cover the pot and simmer on low for 1.5 to 2 hours until lamb is fork-tender.
  5. Taste and adjust seasoning before serving.
