  • 1 lb boneless lamb shoulder, diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 large yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp smoked paprika
  • 4 cups low-sodium vegetable broth
  • Juice of 1 lemon
  • Fresh cilantro or parsley, chopped for garnish
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil. Once hot, sauté the chopped onions and minced garlic until golden brown.
  2. Add the diced lamb shoulder to the pot and sear until browned on all sides.
  3. Stir in cumin, coriander, paprika, salt, and pepper until lamb is coated in spices.
  4. Pour in the drained chickpeas and vegetable broth. Bring to a gentle boil.
  5. Lower the heat and let it simmer for about 30 minutes until the lamb is tender.
  6. Just before serving, add fresh lemon juice and garnish with chopped herbs.
