  • 12 oz bow tie pasta
  • 1 lb Italian sausage (spicy or sweet)
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 28 oz can crushed tomatoes
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp dried oregano
  • 1/4 cup fresh basil, chopped (or 1 tsp dried)
  • Salt and pepper to taste

Instructions

  1. Cook the bow tie pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and reserve some pasta water.
  2. In a large skillet over medium heat, warm the olive oil. Add sliced Italian sausage and cook until browned on all sides (5–7 minutes).
  3. Stir in diced onion and minced garlic; sauté until soft and translucent (about 3–4 minutes).
  4. Pour in crushed tomatoes and add oregano and basil. Stir well and let simmer for about 10 minutes until the sauce thickens.
  5. Combine the cooked pasta with the sauce in the skillet, tossing to coat evenly. Add reserved pasta water as needed for desired consistency.
  6. Remove from heat and sprinkle with Parmesan cheese before serving.
