Ingredients

  • 34 lbs Chuck Roast
  • 1/2 cup Pure Honey
  • 23 Chipotle Peppers in Adobo Sauce
  • 1 Medium Onion, chopped
  • 4 Garlic Cloves, minced
  • 1 cup Low-Sodium Beef Broth
  • Salt and Pepper to taste
  • Tortillas (corn or flour)
  • Fresh toppings (Cilantro, Lime Juice)

Instructions

  1. Season the chuck roast with salt and pepper on all sides.
  2. Sear the roast in a hot skillet until browned evenly.
  3. Transfer the seared roast to a slow cooker and add onions, garlic, honey, chipotle peppers, and beef broth.
  4. Slow cook on low for 8 hours or high for 4 hours until the beef is fork-tender.
  5. Shred the beef and mix it back into the cooking juices.
  6. Warm tortillas and assemble tacos with shredded beef and your choice of toppings.
