  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 2 tablespoons olive oil
  • 4 large flour or whole wheat tortillas
  • 2 cups mixed greens (spinach and arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, thinly sliced
  • ½ cup ranch or tzatziki sauce

Instructions

  1. In a bowl, combine minced garlic, olive oil, salt, and pepper. Coat chicken thoroughly and let it marinate for at least 30 minutes.
  2. Heat a skillet over medium-high heat. Cook marinated chicken for about 6-7 minutes on each side until golden brown and cooked through. Allow resting for a few minutes.
  3. Cut rested chicken against the grain into thin strips.
  4. Lay tortillas flat; layer with mixed greens, sliced chicken, tomatoes, cucumber, and drizzle with sauce. Roll tightly.
  5. Cut wraps in half diagonally and enjoy fresh!
