Ingredients

  • 4 boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces
  • 2 cups fresh broccoli florets
  • 4 cloves garlic, minced
  • 1-inch piece ginger, peeled and minced
  • 4 tablespoons low-sodium soy sauce
  • 2 teaspoons cornstarch mixed with 2 tablespoons water
  • 2 teaspoons sesame oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons vegetable oil for stir-frying

Instructions

  1. In a bowl, combine chicken pieces with soy sauce, ginger, garlic, and cornstarch mixture. Let marinate for at least 15 minutes.
  2. Add vegetable oil to a large wok over medium-high heat until shimmering.
  3. Add minced garlic and ginger to the wok; sauté for about 30 seconds until fragrant.
  4. Add marinated chicken to the wok; cook for 5-7 minutes until golden brown.
  5. Toss in broccoli florets and remaining marinade; stir-fry for another 3 minutes until broccoli is bright green but crunchy.
  6. Serve hot over rice or noodles.
