  • 1 lb lean ground beef (80/20)
  • 1 packet taco seasoning (1 oz)
  • 1 can black beans, rinsed (15 oz)
  • 2 cups diced fresh tomatoes (or 1 can)
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 2 cups tortilla chips
  • ½ cup sour cream
  • ¼ cup chopped green onions

Instructions

  1. Preheat oven to 350°F (175°C) and spray a large baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown the ground beef until no longer pink; drain excess fat.
  3. Stir in taco seasoning and black beans until well combined; cook for 2 minutes.
  4. Layer tortilla chips at the bottom of the baking dish, followed by half of the beef mixture, half of the diced tomatoes, and a sprinkle of cheese.
  5. Repeat layers with remaining ingredients, finishing with cheese on top.
  6. Bake for 25-30 minutes or until bubbly and golden brown.
  7. Serve hot topped with sour cream and green onions.
