Description

Ingredients

  • 1 cup fresh strawberries (halved)
  • 1 cup coconut milk (full-fat)
  • 1 cup blueberries
  • 2 tbsp honey or maple syrup (adjust to taste)
  • 1 tbsp lemon juice

Instructions

  1. Wash strawberries and blueberries; halve the strawberries.
  2. Blend strawberries with 1 tbsp honey and lemon juice until smooth. Pour into popsicle molds, filling halfway.
  3. Mix coconut milk with remaining honey; pour over the strawberry layer.
  4. Blend blueberries with honey until smooth and pour over the coconut layer.
  5. Freeze for 4-6 hours until solid.
  6. To serve, run warm water over mold edges to easily release popsicles.
