- 1 cup fresh strawberries (halved)
- 1 cup coconut milk (full-fat)
- 1 cup blueberries
- 2 tbsp honey or maple syrup (adjust to taste)
- 1 tbsp lemon juice
Instructions
- Wash strawberries and blueberries; halve the strawberries.
- Blend strawberries with 1 tbsp honey and lemon juice until smooth. Pour into popsicle molds, filling halfway.
- Mix coconut milk with remaining honey; pour over the strawberry layer.
- Blend blueberries with honey until smooth and pour over the coconut layer.
- Freeze for 4-6 hours until solid.
- To serve, run warm water over mold edges to easily release popsicles.
