  • 8 oz thin wheat or rice noodles
  • 3 tbsp toasted sesame oil
  • ¼ cup low-sodium soy sauce
  • 2 tbsp creamy peanut butter
  • 2 cloves garlic, minced
  • 1 tsp sugar (or honey)
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 2 green onions, sliced
  • 2 tbsp toasted sesame seeds

Instructions

  1. Cook the noodles according to package instructions until al dente. Drain and rinse under cold water.
  2. In a bowl, whisk together soy sauce, toasted sesame oil, peanut butter, minced garlic, and sugar until smooth. Adjust consistency with warm water if needed.
  3. In a large bowl, combine cooled noodles with the sauce and toss until well-coated.
  4. Fold in julienned cucumbers and carrots along with sliced green onions.
  5. Serve chilled and garnish with toasted sesame seeds.
