  • 4 medium flour tortillas
  • 1 lb lean ground beef
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup dill pickles, finely chopped
  • 2 tbsp ketchup
  • 2 tbsp mustard
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tbsp cooking oil (olive or vegetable)

Instructions

  1. Prepare ingredients by chopping pickles and gathering all items.
  2. In a skillet over medium heat, cook ground beef with onion powder and garlic powder until browned (5-7 minutes). Drain excess fat.
  3. Stir in ketchup and mustard until well combined.
  4. On one half of each tortilla, layer cheese, seasoned beef mixture, pickles, and more cheese before folding.
  5. Heat oil in the skillet again and cook folded quesadillas until golden brown (3-4 minutes per side).
  6. Slice into wedges and serve with extra ketchup and mustard.
