Instructions
- Slice eggplants into thick rounds, sprinkle with salt, and let sit for 30 minutes to draw out moisture.
- In a skillet over medium heat, sauté chopped onions until translucent. Add minced garlic and ground meat; brown thoroughly.
- Stir in crushed canned tomatoes, season with salt and pepper, and simmer for 20-25 minutes until thickened.
- For the béchamel sauce, melt butter in a saucepan, whisk in flour until bubbly, then gradually add milk; cook until thickened and season with nutmeg.
- In a greased baking dish, layer half of the eggplants followed by half of the meat sauce; repeat layers and top with béchamel sauce.
